Perfect Roast Chicken

This simple recipe is sure to guarantee you a perfectly roasted chicken with loads of flavour time after time.


Serves 4

  • 1.5kg whole chicken
  • 1 lemon, cut in quarters
  • 4 garlic cloves
  • 4 sprigs of fresh rosemary
  • 60g butter
  • salt and pepper
  • 250ml chicken stock
  • 250ml water
  • 125ml white wine

Heat the oven to 250°c. Stuff the chicken with lemon, garlic, 2 sprigs of rosemary and the butter. Place the remaining rosemary into a roasting pan. Rub the chicken with salt and pepper to season and place on top of the rosemary in the pan.

Mix the chicken stock, wine and water and pour into the roasting pan. Roast the chicken for 1 hour or until cooked and crisp. During cooking, top up the liquid in the pan if necessary.

Serve with your favourite veggies or salads.
